Black Bean Salsa

The holidays are coming up and it’s the perfect time for potluck and appetizers.  Here is a quick and easy recipe that is delicious!IMG_8265

Black Bean Salsa

One can black beans
One can corn
One can tomatoes with green chillies
2-3 Tomatoes
1 Medium Onion
3-5 Fresh Jalapeno’s
1/2 Bunch of Cilantro
Juice of one Lime
A little Sea Salt to make it a little juicy!IMG_8268

Drain and rinse all of the canned items.  I like to make sure the there isn’t any black bean juice within the salsa.  Chop the cilantro, dice the tomatoes and onion, add to the beans/corn/tomatoes with chilies.  Use a food processor for the jalapeno’s making the salsa as mild or hot as you like!  Mix everything together adding the lime juice and salt to taste!

It also adds so much to a meal.  I like to put it on top of salmon, fajitas, tacos, nachos, chicken you name it!
